Ingredients
• 2 medium zucchini • 1 cup cooked ground beef • 3/4 cup shredded mozzarella, divided • 1/2 cup marinara sauce • 2 tbsp grated Parmesan • 1 tsp Italian seasoning • 1/2 tsp garlic powder • 1/4 tsp salt • 1/4 tsp black pepper • 1 tbsp olive oil • Fresh basil, optional
Instructions
1. Preheat your oven to 400°F (200°C).
2. Slice the zucchini lengthwise into thin strips, about 1/8-inch thick. A vegetable peeler or mandoline can help create even slices.
3. Lay the zucchini strips on paper towels and lightly sprinkle with salt. Let them sit for 8–10 minutes, then pat them very dry. This helps prevent watery lasagna.
4. Heat a skillet over medium heat and combine the cooked ground beef with Italian seasoning, garlic powder, black pepper, and Parmesan. Cook for 2–3 minutes until hot and well seasoned.
5. Spread about 1/3 cup of marinara sauce across the bottom of a small baking dish.
6. Place a spoonful of the beef mixture and a little mozzarella near one end of each zucchini strip. Carefully roll the zucchini into a tight spiral.
7. Arrange the zucchini rolls seam-side down in the baking dish.
8. Spoon the remaining marinara sauce over the rolls and sprinkle with the remaining mozzarella.
9. Bake uncovered at 400°F for 18–20 minutes, until the zucchini is tender and the cheese is melted, bubbling, and lightly golden.
10. Let the roll-ups rest for 3–5 minutes before serving. Finish with fresh basil or extra Parmesan if desired.
