Ingredients

For the Chicken:

  • 1½ lb boneless, skinless chicken thighs or breasts, cut into strips
  • 1 tbsp olive oil
  • 1 tbsp low-sodium soy sauce or tamari
  • 1 tbsp lime juice
  • 1 tsp curry powder
  • 1 tsp ground coriander
  • ½ tsp ground cumin
  • ½ tsp garlic powder
  • ½ tsp ground ginger
  • ¼ tsp turmeric
  • ¼ tsp black pepper
  • ¼ tsp salt

For the Spicy Peanut Sauce:

  • ⅓ cup natural creamy peanut butter
  • 2 tbsp low-sodium soy sauce or tamari
  • 1½ tbsp lime juice
  • 1 tbsp unsweetened coconut milk or warm water
  • 1 tsp sesame oil
  • 1 tsp freshly grated ginger
  • ½–1 tsp chili garlic sauce or sriracha
  • 1 tsp monk fruit sweetener or another low-carb sweetener, optional

For the Slaw:

  • 6 cups thinly sliced Savoy or green cabbage
  • ½ cup thinly sliced red bell pepper
  • ½ cup matchstick-cut carrots
  • ¼ cup finely chopped green onion
  • 2 tbsp toasted sesame seeds
  • Lime wedges, for serving
  • Fresh cilantro, optional

Instructions

  1. In a large bowl, combine olive oil, soy sauce, lime juice, curry powder, coriander, cumin, garlic powder, ginger, turmeric, black pepper, and salt.
  2. Add the chicken strips and toss until evenly coated. Let the chicken marinate for 10–15 minutes.
  3. While the chicken marinates, whisk together peanut butter, soy sauce, lime juice, coconut milk or warm water, sesame oil, ginger, chili garlic sauce, and optional sweetener. Add a little extra water if needed until smooth and spoonable.
  4. Heat a large skillet or grill pan over medium-high heat. Add the chicken in a single layer and cook for about 5–7 minutes per side, depending on thickness, until browned and cooked through. The chicken should reach 165°F (74°C) in the center.
  5. Remove the chicken from the pan and let it rest for 2–3 minutes, then slice into bite-sized strips.
  6. Add the cabbage, bell pepper, carrots, and green onion to a large bowl. Toss until evenly combined.
  7. Divide the slaw among 4 meal-prep containers. Top each portion with one-fourth of the chicken and toasted sesame seeds.
  8. Divide the spicy peanut sauce among 4 small containers. Keep the sauce separate and drizzle it over the bowls just before serving.

Ingredient Spotlight

  • Chicken: A high-quality source of lean protein that absorbs the satay marinade perfectly.
  • Peanut Butter: Provides healthy fats, protein, and the rich, creamy base for the classic spicy sauce.
  • Cabbage: A sturdy, low-carb vegetable that stays crunchy for days, making it ideal for meal prep.

Easy Swaps

  • Use chicken breast instead of chicken thighs for a leaner option.
  • Swap cabbage for shredded broccoli slaw or finely sliced lettuce.
  • Use almond butter instead of peanut butter for a different flavor.
  • Replace carrots with extra bell pepper or cucumber for a lower-carb option.

Storage

  • Store the chicken and slaw in airtight containers in the refrigerator for up to 4 days.
  • Keep the peanut sauce separate until serving.
  • Reheat the chicken in the microwave or skillet until hot, then add the cold slaw and sauce.

Serving Ideas

  • Add sliced cucumber and fresh cilantro for extra freshness.
  • Top with crushed peanuts and a squeeze of lime.
  • Serve with steamed broccoli or cauliflower rice for a more filling low-carb meal.
